Basil

Greek

A fine leaved compact plant, a little goes a long way with this basil. Greek Basil is a traditional ingredient in pizzas. A spicy herb that can be used fresh or dried in salads, vegetable dishes, tomato dishes, pastas or soup.

Lemon

This basil is lemon scented and flavoured. Use freshly picked leaves with chicken, fish, vegetables, vinegars, Italian & Asian cuisine, curries, stews, stir fries, soups, salads and as a garnish. Can also be used in herbal tea and in potpourri. High in Vitamin C & A, calcium, phosphorous and potassium, Basil is also considered to be a powerful antioxidant.

Purple

Red

The unusual reddish-purple leaves have a clove-like spiciness flavour which is stronger than sweet basil. Red Basil can be used as you would Sweet Basil, with the exception of pesto dishes. Use with pasta sauces, vinegars, fish, poultry, rice, Italian dishes, salads and garnishes.

Chamomile | German

A sweetly scented herb bearing a profusion of single, white daisy flowers with bright yellow centres in summer. The dried flowers can be used to make a soothing herbal tea, or used as a rinse to lighten hair. Easy to grow, German Chamomile enjoys moist, well drained soil. Flowers best when kept moist in dry weather .

Chives | Garlic

Leaves are flat, solid and paler than normal chives, having a mild garlic flavour with a sweetish undertone. Rich in Vitamin C, calcium and iron, high in carotene, thiamine and riboflavin. Garlic chives has a stronger, sharper flavour than normal chives. A natural antibiotic and antiseptic, it is claimed to be able to help reduce blood pressure. Can be used in Asian cuisine, soups, vegetables and meat. Trim often to promote new growth.

Curry Plant

The unique dusty grey foliage with new green growth has a strong curry scent. Use sparingly as it is strong, and add at the end of cooking as it loses its flavour with prolonged cooking. Adds a curry flavour to dishes, and can be used with mayonnaise, chicken and salads. Herbal tea can be made from the flower heads. One of the most reliable silvery foliaged plants for landscaping, it can also be pruned to shape.

Dill

The fine lacy blue-green foliage has an aniseed flavour. Use fresh leaves with chicken, fish, potatoes, eggs, green salads, vegetables, stews, sauces, butters and vinegars. Seed harvested from plant can also be used in pickles, teas, cookies and bread. Flowers can be used in the same way. Chewing dill seed will freshen your breath. Lemon Grass

Leaves and stems are used fresh or dried to impart a distinctive lemon flavour. Use in Asian cuisine, soups, curries, seafood, poultry, fish, sauces, savoury dishes, meat, pickles and marinades. Lemon Grass can also be used in herbal tea. Rich in Vitamin A, Lemon Grass also has anti-fungal properties, and is considered a diuretic, tonic and stimulant.

Marjoram | Sweet

This sweet and spicy herb has a mild oregano flavour with a hint of balsam. Marjoram can be used as a substitute for Oregano. This diverse herb can be used with beef, veal, lamb, roast poultry, fish, pate, vegetables, butters, vinegars, soup, stews and sauces. Can also be used as a tea to help relieve tension headaches and minor digestive upsets. Marjoram has mild antiseptic properties and is good for the skin.

Mint

Apple

The green apple scented foliage can be stripped and washed, then used to flavour salads and fruit salads. It is ideal for use as a refreshing additive to orange juice and fruit punches, and can also be used as a tea which aids digestion.

Chocolate

The aromatic bronze green foliage of Chocolate Mint combines the uplifting aroma of peppermint with the irresistible fragrance of chocolate. Great for drinks, salads, desserts, sauces, ice cream, cakes, garnishes or use to flavour tea and coffee. At the end of the growing season, cut back to ground level.

Ginger mint has smallish, yellow green leaves with a taste of mint and ginger. Ginger mint is ideal to use in soups, summer salads, mint tea and more. Perfect for stir-fry dishes, Ginger mint adds a zesty flavour and texture to your culinary dishes. Excellent dried or fresh.

Thai

Thai mint is a strain of peppermint with bright green, perfumed, wrinkly leaves. A popular herb in Thai cuisine, the leaves can be used fresh in spicy salads, and savoury dishes. Leaves can be chewed to reduce bad breath, and help to cleanse the palette. Thai mint has mild antiseptic properties, is a mild stimulant, and can help to relieve headaches, cold symptoms, and reduce indigestion and flatulence. Water often for lush, fresh growth.

Vietnamese

An Asian herb with a strong citrus aroma and a taste similar to coriander with a lemon twist, this mint is also known as ‘Hot Mint’ and ‘Vietnamese Coriander’. The striking pointed leaves are lime green with dark inner markings. Use leaves sparingly to add flavour to salads, soups, fish, and chicken. Can also be used in herbal teas. Prune to encourage the plant to produce bushy growth.

olive leaf


This sensational new herb really does add flavour and aroma of olives to cooking. Traditionally a cold-hardy, low maintenance perennial, this attractive herb gives off an intense olive aroma that is simply irresistable. Can be added to salads and meditteranean dishes as an olive alternative, or to strengthen the flavour. Olive Leaf flowers with nice little yellow buttons from January to February and makes a neat little hedge or shrub.

Green

An aromatic, warm and slightly bitter tasting herb, that is high in anti-oxidants and anti-bacterial properties. The strong flavoured leaves can be used with tomato sauces, Italian and Greek cuisine, pizza, lamb, pork and salads. Oregano can also be used in herbal tea.

Hot & Spicy

True to its name, this oregano is especially pungent, which makes it a good choice for mexican dishes. Commonly used also in Italian and Greek dishes, 'Hot & Spicy' is a cultivar of greek oregano with an intense aromatic flavour which is both peppery and strong. Foliage is dark green and slightly hairy with abundant white flowers in summer and a nice round, mounding habit.

Rocket

The peppery mustard flavoured leaves are high in protein, and are considered to be an appetite stimulant and digestive. Rocket can be used with tomatoes, Italian dishes, soups, salads, stir fries, pasta and sauces. Harvest foliage as required, cutting stems back to the base to promote fresh, lush new growth.

Rosemary

The fragrant evergreen leaves are extremely high in iron, calcium and Vitamin B6. Finely chop leaves and use to flavour Mediterranean cuisine, lamb, fish, vegetables, meat, soup, stews, rice, jam, jellies and biscuits. Can also be used in herbal tea. Rosemary is considered to be antibacterial, antifungal, antioxidant and antiseptic. Use a rosemary infusion in shampoo to strengthen and stimulate hair. Rosemary should be kept drier than most herbs.

Green

Sage has a slight peppery taste and is considered to have antiseptic and astringent properties, and is a tonic. Leaves are used extensively for flavouring marinades, cheese, poultry, pork, lamb, soups and sauces. Can also be used in herbal tea. Bunches can be dried to scent the pantry.

Pineapple

This sage has red flowers from summer through to autumn with a tangy citrus-mint flavour that resembles pineapple. Can be used in teas and punches, jellies, fruit salads, desserts, chicken, fish and pork.

Tricolour

Grown for its attractive, aromatic leaves of green and cream, tinged with pink, Sage Tricolour is a decorative and useful herb. The leaves can be used for flavouring veal, pork, poultry, cheese, egg dishes and poultry stuffings. With medicinal antiseptic and anti-inflammatory properties, Tricolour Sage enjoys well drained soil and responds well to liquid feeding. Prune to shape after flowering.

Spinach | Baby

Baby Spinach is the highest vitamin rich vegetable of them all. Rich in folate, beta-carotene, lutien and Vitamins A, B1, B2, B6, C & K, also high in iron and other trace elements. Can be used with salads, stir fries, casseroles, meat and poultry. Spinach can be served fresh or cooked. Considered to have low fat content, anti-cancerous properties, reduces blood pressure and strengthens muscles.

STEVIA

Stevia is 20-30 times sweeter than sugar cane, but has only low calories. Dry leaves can be crushed by hand or using a mortar and pestle to release the sweetening flavour. Leaves can also be used fresh. Add flavour to food, or drinks such as tea. This remarkable herb does not adversely affect blood glucose levels and may be used by diabetics.

Pizza thyme, sometimes known as Italian thyme, is a perennial plant with deep green oval shaped leaves and pink flowers in spring/summer. Strongly flavoured, with a scent of thyme and oregano. Use with pizza, pasta, stuffing, soup, baked vegetables, mushrooms, and omelettes.

Watercress

A hardy perennial with a tangy peppery mustard flavour. Watercress is classed as a ‘Super Vegie’. Use in soups, salads, dips, juice, stir-fries, stews and as a garnish. Rich in Vitamin A, C & D, as well as calcium and iron. Watercress has many health benefits. Some of the actions are antibiotic, antibacterial, diuretic, expectorant, stimulant, digestive, stomachic, antiscorbutic, antiseptic, antioxidant and tonic. Harvest at 10-15cm high. This herb may be cut several times and used in cooking or popularly drunk as a shot.
