Benefits of Fresh Herbs


Herbs can be cut, air dried and stored for 2-3 weeks if they need to be preserved, but quite simply herbs are best used fresh.


Why?

  • When herbs dry, they shrink and become lighter in weight as moisture exits the leaves. Along with the moisture, some essential oils and other medicinal and health properties may be lost.
  • The medicinal and culinary properties of herb leaves begin to change and deteriorate as soon as they are removed from the plant, so the fresher the better.
  • Not all herbs dehydrate at the same rate, which also makes drying a difficult process in the kitchen.

So as a general rule, fresh is best.
